A patented ice shape, that offers many useful benefits: the individually formed cubes are easy to handle and dispense, and will nestle in the glass for higher displacement than other ice shapes, with reduced splash-back as drinks are poured. When high demand is facing limited space,Scotsman offers Vertical Evaporator technology to solve problems. Widthof 30″ and 22″ are available, with production capacities up to 60 glasses of 16 oz (450 ml) in 15 minutes.

Pure, solid and crystal clear, these thimble-shaped, individually formed cubes enhance the presentation of any drink and are slow melting to least effect the quality of drinks. Available in three sizes, there is a gourmet cube to suit all shapes and size of glass, and their large surface area guarantees fast refreshment.

Gourmet cubes are obtained by spraying and freezing water onto the horizontal evaporator where ice is formed. This is the secret of both clarity and purity, and a method originally patented by Scotsman. The mineral residuals that naturally accumulate within the water reservoir are flushed out as fresh water is taken into the machine for the next batch of ice. Solid ice, no air pockets and no minerals. Ice cubes that are actually purer than the water from which they are formed.
